Easy Curry Recipes

This is a selection of incredibly simple and easy curry recipes. They all take less than an hour including cooking time and some of them can be made in even less time. There are no hard and fast rules for making a curry, and to an extent, what you have available in the cupboard will dictate how the curry turns out. The first few will give some ideas for using up leftover Turkey.
Easy leftover Turkey Curry
Ingredients and directions
- A splash of Olive oil
- 1 chopped onion
- 2 cloves crushed garlic
- 3 tablespoons curry powder
- 1 400g (14oz) can chopped, crushed or diced tomatoes
- 1 cube chicken stock
- 1 can water
- 1 lb of leftover turkey cut into cubes
Heat the oil in a pan and add chopped onion followed by the crushed garlic after a minute or two. Add the curry powder and fry the spices for another two minutes. Add tomatoes, chicken stock cube. Refill the tomato can with water and add. Add the chopped turkey, bring to a boil and simmer for 30 minutes. The meat should be falling to pieces by this time. Serve with white basmati or pilau rice.
Simple vegetable curry
This is very similar to the preceding recipe but uses frozen vegetables instead
Ingredients and directions
- A splash of Olive oil
- 1 chopped onion
- 2 cloves crushed garlic
- 3 tablespoons curry powder
- 1 400g (14oz) can chopped, crushed or diced tomatoes
- 1 cube chicken stock
- 1 can water
- 1 lb of frozen mixed vegetables
The directions are much the same also - heat the oil in a pan and add chopped onion followed by the crushed garlic after a minute or two. Add the curry powder and fry the spices for another two minutes. Add tomatoes, chicken stock cube. Refill the tomato can with water and add. Bring to a boil, add the frozen vegetables and simmer for 30 minutes. The vegetables should be fairly soft. Serve with white basmati or pilau rice.
Leftover turkey balti
Ingredients and directions:
- Splash of Olive oil
- 2 large onions - chopped
- 4 tablespoons Balti paste (Pataks)
- 2 lbs leftover turkey - cubed
- 1 800g (28oz) can chopped, crushed or diced tomatoes
- 1 chicken stock cube
- 1 large can water
- Handful salted cashews
- Bunch fresh coriander
Once again, heat the oil, fry the onions - this time until going golden brown, add the balti paste, cook for two minutes, add the leftover turkey, tomatoes, stock cube and water, bring to a boil, tun down and simmer for 30 minutes. Serve with fresh coriander and salted cashews sprinkled on top.
Simple chicken curry
- Splash of Olive oil
- 1 large onion - sliced
- 4 tablespoons curry paste (Pataks)
- 2 chicken breasts cut into cubes
- 1 400g (14oz) can chopped tomatoes
- 1 chicken stock cube
- 1 400g can of water
- Bunch fresh coriander
This is another simple recipe. Heat the oil, add the onion and cook until turning golden brown; add the chicken and cook until also going brown. Add the Pataks curry paste, cook for another 2 minutes, then add the tomatoes, stock and water. Bring to a boil and simmer for 30 minutes. Serve with fresh coriander and Basmati rice.
Curried sausages recipe
Curried sausages? Yes - why not? You can turn almost anything you like into a curry and this one is simple as they come.
Ingredients and directions:
- Splash of Olive oil
- 1 large onion - sliced
- 4 tablespoons curry paste (Pataks)
- 1 lb sausages cut into slices
- 1 400g (14oz) can chopped tomatoes
- 1 chicken stock cube
- 1 400g can of water
- Bunch fresh coriander
Heat the oil, add the onion and sausages ate the same time and cook until the onions are turning golden brown. Add the Pataks curry paste, cook for another 2 minutes, then add the tomatoes, stock and water. Bring to a boil and simmer for 30 minutes. Serve with fresh coriander and Basmati rice.
I never, ever, ever use ready made spice pastes or sauces......... With one exception.......Pataks. Mrs Patak must have sold her soul to the devil to be able to get the taste she manages to get into her pastes. And it was worth it as far as I am concerned. I can honestly say that I only manage to make a better one myself about 50% of the time so it is worth buying hers. I almost never recommend a brand but in this case feel perfectly happy saying Pataks make the best curry paste on the market and rival a restaurant sauce. And the ready made sauces are pretty hard to beat also. :(
