Chocolate and Coffee Brownies

If you are not content with a double shot of espresso to kick start the day, here’s a great recipe to perk up those slow-to-start people among us (myself included). Although, as the saying for beer goes, “Brownies are not just for breakfast.”

This is a really easy recipe and takes about 20 minutes to prepare, 45 minutes of cooking time and an agonizing 15 minutes cooling time.

Brownies are another quintessential American recipe. Just try one of these with your morning coffee and I swear you will be able hear better, see better and all your senses will be heightened. You may not sleep for two days, but you’ll feel great. You can of course, as with all my recipes, adjust it to suit your own taste. If you want, add some chopped walnuts or pecans or anything else that takes your fancy. I like to add some candied lemon or orange peel sometimes or spice them up with a little ginger, cinnamon and chili pepper. But this is the basic recipe so add away. Just keep the basic ingredients the same – you can’t go wrong with this.

You will need:

Equipment:

  • A baking tray (8 inch x 8 inch)
  • A large bowl and a whisk or A food processor
  • A medium saucepan
  • A sifter
  • A small bowl
  • A wooden spoon

Ingredients:

  • 4 large eggs
  • 1 cup white sugar, sifted
  • 1 cup brown sugar, sifted
  • 8 ounces butter
  • 1 ¼ cup dark, unsweetened chocolate or chocolate powder
  • 1/2 cup espresso beans – very finely ground
  • 2 teaspoons vanilla extract
  • 1/2 cup flour, sifted
  • 1/2 teaspoon kosher salt

Preheat the oven to 300F. In a sauce pan bring some water to the boil, place a bowl over the pan and melt the chocolate and butter in the bowl with the salt and ground coffee. Stir with a wooden spoon until it’s nice and smooth. Set aside and leave it to cool down.

In another bowl, whisk the eggs until they are light and fluffy. Sift the flour, and sugar into the eggs, folding in gently. Add the melted butter/chocolate/coffee mix and mix gently.

Lightly butter and then flour the baking tray and pour the brownie mix in. Bake in the oven for 45 minutes or until a tooth pick inserted comes out clean. Place on a wire rack to cool. Wait for it to cool before cutting into individual brownies. I said wait! Guaranteed the best, tastiest, stickiest brownies on the planet or your money back. Sprinkle with powdered sugar to finish, or.......

If you want to die of a sugar overdose, just add this chocolate frosting

  • 1 cup granulated sugar
  • 1/4 cup cocoa
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 teaspoon vanilla

Mix all the ingredients, add to a small saucepan, bring to the boil, then beat in a mixer or food processor until thick and spreadable.

Warning! DO NOT EAT AFTER 8 O’ CLOCK AT NIGHT – YOU WILL NEVER GET TO SLEEP.

This is awesome. Just be sure to butter the pan well or use a well seasoned one - It does tend to stick sometimes :)
