How to Make American Style Pancakes

Cooking made easy – American style pancakes
Pancakes. Every one loves pancakes and most people buy a ready-made mix. Why not try making your own? They taste far better and are really easy to make. And, you know exactly what went into them. No preservatives, no artificial flavors. Much better. This recipe takes about 15 minutes preparation, mostly waiting for the buttermilk to be ready. That’s right, this is a twofer, you will make your own buttermilk too. Buttermilk is not widely available in Europe, so I had to work out how to make my own, and it tastes much better than the store bought. Try it and see.
This is how to make american pancakes – makes 4 large pancakes or 12 small or 20 dollar pancakes.
You will need:
Equipment:
- A jug
- A bowl
- A fork
- A spatula
- A skillet or heavy frying pan
Ingredients:
For the butter milk:
- ½ cup plain yoghurt
- ¾ cup milk
- 1 table spoon lemon juice
For the pancakes:
- 1 ¼ cup of buttermilk
- 1 egg
- 1 ½ cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ cup sugar
- 1/4 cup of oil
- A pinch of salt
To make the buttermilk, put the yoghurt and milk into a jug add the lemon juice and mix. Leave to stand for 15 minutes. This allows the milk to curdle slightly and the yoghurt gives a light fluffy texture to the pancakes that you don’t quite get using milk only. If you don’t have yoghurt just use more milk instead, but I have found that the mixture of the two works better.
To make the pancake mix. First add the dry ingredients to a bowl and mix. Next break the egg into the dry ingredients and mix with a fork. Next add the buttermilk and oil and stir. The mixture will be a little lumpy but that’s OK it adds to the texture of the pancakes.
Next, take the skillet, add two tablespoons of oil and heat on a medium heat. When the oil is hot, add some mixture to the pan. If you want large pancakes, add a lot, if you want small pancakes add less.
Cook over the medium heat until the top of the mixture hardens, turn and cook the other side. The cooking takes very little time, perhaps four minutes. When the pancakes are brown they are ready. Serve with butter and maple syrup. I served these with bacon and eggs, but they go well with sausages or whatever you prefer for breakfast. For a change, if you like, you can add fruit to the mix, blueberries are good. Easy.

Thanks mathan - I try to mix these as little as possible - just enough to get the ingredients combined.
I had to find a way of making my own buttermilk where I live - I just can't buy it here - but this works fine. And I tyhink most people will have these ingredients to hand.
I always make my stuff from scratch - it tastes so much better when you have made it yourself. Sorry I make you hungry :)
Mmmm... Pancakes! I love homemade pancakes. I may have to try these this weekend! I've never tried making pancaked with lemon juice. I sounds good.

Mark, I am so impressed! Great work. We grew so tired of getting mediocre pancakes from the ready made mixes that we decided to actually do something about it - for everyone. We dove in, created what we have been told are "some of the best pancakes" people have ever had - especially from a mix. We even have one that is great in taste and consistency for people that might have blood sugar issues - made with 100% red spring wheat, sweetened with fruit extracts and it uses olive oil as well.
We actually package our mixes in 2 cup portion pouches to help keep the oxygen & sun light away from the mixes. Our mixes that come packaged in a metal tin, well...all you do is open a pouch and use the tin's lid (measures 1 cup of H20) plus a splash, mix and you are good to go.

i tried your pancake recipe today for the first time. also a first-timer on making american pancakes. i had always wanted to eat them. over the years, had seen enough teasers on the television :o)my family, too, was excited about the tea-time treat they were going to get.
the batter turned out just right. so did the pancakes when cooked. before i could try my first morsel, i hear my sister saying "it is way too sweet!". i thought to myself, "that is how they are supposed to be". and continued cooking some more.
a while later, i glanced over the recipe sitting on my laptop and saw '1/4 cup sugar' while i added 1 1/4 cups!!
a real SWEET treat indeed!! :oD
so i added some more flour and butter milk to it to bring down the sweetness. need to tweek it some more though for tomorrow's tea-time :o)
apart for my misshap, thumbs up to you for an excellent recipe :oD

Try them this way - the crap in most American pancake mixes is funny. These - you will like.

Well - you could always ask her to try cooking them.Trust me - these are good. Different to blini or crepes - but only really because of the raising agents. Use real butter instead of that American whipped garbage and you will probably like them.

Should I ask if these are american cups or brittish cups. (What is wrong with SI-units *smile*, then I should not wonder which one it is. They say that american cup is about 2,37dl and brittish 2,84dl, would not be problem if all ingredients would be in cups but there are egg and teespoons so it makes a differ.) However, I will try these as soon as possible.

I eat pancakes just about everyday. I used to do the plain ol' pancake mix. Then I ran out and thought I have the ingredients so I'll try that. lol. I enjoyed it the normal cookbook way. So now I am going to the store to get some yogurt and whip me up a batch. My son is a soy milk baby so the pancakes are ok for him. He can handle some regular milk. He absolutley loooves pancakes. He is still young but I will give him some and he freaks!
Question Mark.... do you know where a good place to find soy milk recipes? Not Vegan or vegitarian... I can eat anything...its just my son. We cant figure it out...

Sorry no. I have never really used soy milk. Does that mean your son is allergic to cow's milk? Because it might be an idea to try sheep or goat's milk instead and see how he copes. I imagine both of those would cook up much the same as cow's milk.
Please can you post your recipies in grams (g) i think thats what john was trying to say, im sure these will be great its just that whenever i see a recipie in cups its really annoying because i won't be able to do it.
p.s i live in Britain so american "cups" are hard to buy

Looks like these will be great, just one question though, would this recipe work without the lemon juice (im not a fan :}) im definately gonna try this today
The lemon juice is simply to start the milk curdling to make buttermilk.
You will not be able to taste it at all. :)

I live in the UK but i'm Brazilian, and once in Brazil we use grams and kilograms for measuring I got in trouble to get used with British measures and I got myself a measuring jug for culinary purposes. It shows how much is 1 cup, 1/2; 1/4 etc, so British people chop chop to ASDA or TESCO and buy a measuring jug and your problems are solved :P

Today we decided on having pancakes and found your awesome recipe via Google. We had no plain flour so we substitued High grade instead and we had no buttermilk but just used milk and lemon juice. We used fresh farm egg from the chook house topped with homemade honey yogurt and maple syrup. Enjoyed in the misty NZ winter with sun shining in. THanks!! :)

is there a substitute for lemon juice, can i just squeeze out a fresh lemon or would that make it taste a bit sour rather than sweet?
Well - lemon juice is lemon juice - fresh or otherwise. I usually use fresh. But - you want it a little sour in any case. The sugar in the mix is plenty sweet enough. In a pinch you can use white vinegar instead.
This recipe seems easy enough to follow.
I have never had official american pancakes as im an English lad that has the thin and chrispy ones!
Im looking to alta this recipe to that its 'healthier' maybe ditching the sugar for honey? and removing the yolk from the egg but this may lose the fluffyness of the pancake...
also im into bodybuilding atm so may add some whey protein powder to :)

Well this time I used Cultured Buttermailk from the supermarket and that worked a treat as well. Pancakes turned out fab for our brunch with maple syrup, banana, greek yoghurt,bacon rashers and crossiants after with scrambled eggs with the whole family chipping in. Hens laid the eggs which were fresh and yummy! Bon appetite.

Hi Mark I just tried your pancake recipe and the grand children loves them. I am an American retired living in England and for allwho wants measuring cups any cook shops have them.
As for your buttermilk its better with lemon vice white
vingar which in the 40 and 50 all chocate cakes ask for.
I had no plain yoghurt so used rasbeery and worked fine and the kids loved the little flavor.

Hello from sunny Aegean city of Izmir.Today my off day,I decided to cook these lovely pancakes and finally result is perfect and almost like Turkish Delight.( I eat with vanilla fla and fruit salad)
I found the mixture to get a crisp texture when it was cooked, it made me feel kinda ill.
Wow, these are fab. I usually just make my kids the typical UK batter and they eat those but these were so light and thick. They wolfed down the whole bowl load of them and asked for more. Probably the nicest pancakes I have ever made! Thanks!!

Just enjoyed these for pancake day breakfast, and they were great. As it was a bit of an impulse decision, I used regular milk instead of butter milk, and melted butter instead of oil. I think the result was somewhat heavier than if I'd stuck to your recipe, but they were tasty none-the-less.
I'm British and used http://www.deliaonline.com/conversion-tables.html to convert to grams very easily.

One thing that I've noticed that helps make a more tender pancake is to mix all of the ingredients thouroughly, without the flour. Add the flour to the mix last and stir it just enough to be mixed up (no streaks of flour), and you're right, lumps are just fine.
I'm sure you know this, overmixing flour produces gluten, which keeps pancakes from being as light, and instead makes the a little on the chewy side.
That's just my two cents though! The whole "overmixing phobia" I have goes back to my cake baking days! It may not matter as much with pancakes. But it's something that I do. :)
Your buttermilk recipe is intersting. I'm definitely going to try that one. I dont use buttermilk often enough to warrant keeping it around the house. I remember my grandfather would drink a tall glass of buttermilk with each meal.
It makes me sad that people don't make pancakes from scratch as much anymore. All too often, they buy pancake mix, which make mediocre pancakes at best. Making them from scratch is so simple!
